Gosh, a year ago today I started my blog! Wow, how times flies!
Last July, I had no real goals in mind when I started blogging. I knew I wanted to keep family and friends updated as to what was going in our lives, like our trip to Miami in January or about David's annual backpacking trips.
I also used to pursue the What's Cooking board on the Nest.com a lot and started reading about all these great recipes on different food blogs. I love cooking and wanted to share it with everyone else, so I figured I would blog about them.
I have noticed that lately though, I have been blogging less about food and trips to more about everyday experiences like work or what happened the past weekend. For awhile, I was also updating pretty often, but recently I have hit a bit a slump. No more several blog updates a week. It's been more like one, if I'm lucky. I have been thinking I should set some goals for my blog and the upcoming year, so here they are:
* Post more often, including more food posts. We recently bought a really nice camera and I need to sit down and learn how to use it, so I can take good food pictures.
* I also am considering about participating in NaBloPomo: National Blog Posting Month come November. A blog entry for each day of the month.
* Finally, commenting more on other people's blog. I know I always love comments and your more likely to blog more often, if you know you have people reading your blog. I would also love to know who is reading my blog, as I am pretty sure I have a couple of lurkers! I am always looking for new blogs to read, so leave a comment and I will be sure to stop by your blog. If you don't have a blog that's okay as well, just say hi!
So there are my goals for the next year. Hopefully, I can look back to this entry in a year and be able to check at least one of those off!

Summer Grilling
One of my favorite aspects of summer is having friends and family over for a summer BBQ. On Friday night, we had the hubby's family over for dinner. We had grilled vegetables, steak and shrimp. I also made a pasta salad with tomatoes and fresh basil, that I got from the garden. To top it off we had coconut cream pie for desert! Sorry no pictures, as the food looked oh so good and I was too hungry!
I do want to share the recipe for the Cajun Grilled Shrimp. Everyone loved them and the hubby did a great job of cooking them to the perfect doneness. I got the recipe from Annie's Eats. She always has great recipes, so check out her blog.
Cajun Grilled Shrimp

Ingredients:
1 lb. of shrimp, peeled and deveined (I bought TJ's already peeled and deveined)
1-2 tbsp. olive oil
salt and pepper
½ tsp. of dried thyme
½ tsp. of dried oregano
½ tsp. of paprika
½ tsp. of garlic powder
pinch of cayenne pepper
Directions:
Pat the shrimp dry with paper towels. Thread onto metal skewers. Brush with olive oil. Season to taste with salt and pepper. Mix remaining spices in a small bowl. Sprinkle spice mixture onto shrimp and pat lightly to help it stick.
(I did change it up a little bit here. I combined the olive oil and all of the spices together in a bowl so it would be easier for the hubby, since he was grilling several items at one time.)
Grill the skewers, until the shrimp are barely charred and bright pink, about 6 minutes.

Relaxing Weekend
This past weekend was very relaxing, which I definitely needed! The hubby went out of town on his annual backpacking trip , and was gone from Wednesday to Monday. This trip they went for an extra day and I told him he is not allowed to go for that long again! Even though I missed him a ton, it did allow me to get somethings done, which I can't do when he is around.
On my Friday off, I got the car washed and headed over to Target to check out their garden selection. I have been looking for awhile now, for Cilantro and couldn't find any. Thanks to Angelina though for pointing me in the right direction! I picked up two Cilantro plants and some flowers from Target. I now have a good selection of vegetables in the back garden. I have 2 tomato plants, cucumber, zucchini, orange bell pepper, jalapeno, parsley and a basil plant. Now if they only start producing some vegetables!
Saturday, I went to a very beautiful bridal shower for a friend of ours and lunch at Nordstorm's Cafe with a friend. I was really sad as I couldn't get my favorite Chicken Lime Cilantro salad, because of the Cilantro recall. :( I ended up getting this really good turkey sandwich though.
I also got some cleaning done. I deep cleaned the kitchen and the shower. I also cleaned up the backyard. So even though David was gone all weekend, it was very productive!

TV Update
Bad news
Nintendo called yesterday and asked the hubby some questions about what happened to the tv and the Wii remote. Basically, the guy told David the damage to the tv was from accessive force, which caused the plastic piece to break and not a defect in the Wii remote. Which of course is bull. But anyways, they are going to take a look at the remote. I am pretty sure they won't change their position though. Just probably send us a denial letter. After working for an insurance company in the claims department and now working in risk management, I am really not surprised with position they are taking. It just really sucks!

A Bubble Bath is Calling My Name
Lately, I have been feeling more stressed, from just life in general and being so busy. The whole tv issue does not help either. When I get stressed I like to eat chocolate. I bought some Dove Chocolate with Almonds the other day and I just had one. Inside they always give you a "Promises Message". Today mine said, "It's definitely a bubble-bath day". I completely agree! I can't remember the last time I had one, but it sounds like a great idea.
You have got to be kidding me
Yesterday afternoon, right before I was supposed to leave work, I get a google chat message from the hubby. Here is our convo as it transpires.
Hubby: Tv broke
Me: what?
Hubby: on phone with nintendo
Me: huh?
Hubby: Wii remote broke
Me: are you serious?
Me: ??????
He doesn't respond to my questions and I had to leave work. My mind puts two and two together, I figure he means the Wii remote broke and somehow hit the tv. I got home and he showed me what had happened. Him and his friend were playing Tiger Woods Golf, when the the plastic piece holding the wrist strap broke, thus hitting the tv.
Now a couple of months ago, we bought a new 46" LCD tv. It had taken a lot of convincing from the hubby, to even get me to agree to buy the darn thing and now it doesn't work. It was freaking expensive. You have got to be kidding me. Ugh!!
Nintendo is supposed to call in 2 days to schedule a time to come out and take a look at the the Wii remote and TV. I so hope they take of it but I'm not counting on it.

AWW! Baby!
I just wanted to give a little shout out to some friends of ours, who just had their baby boy this morning! After being 12 days past due, we are glad Brendan is finally here.

I'm still alive
Nope, I didn't die. I'm still alive. One post in the last 2 weeks is horrible, I know. I really haven't known what to write about or haven't felt like blogging. I'm not sure which it reallyt is.
Last week, was extremely long for me. The work days been by very slowly. It was hard going from 4 ten's to 4 eight's, because of the holiday and then back to 4 ten's. I have noticed, that I have been getting antsy from sitting still all day. Also, I can't go 10 hours and only eat once. The hubby and I went to the grocery store yesterday and I picked up things I can munch on through out the day, that are some what healthy for me.
Today, I am here in my little room all by lonesome. One of the girls has Monday's as her day off and the other took the day off so it will probably be another slow day for me. Only 3 more work days!
Anyways, hopefully I can get back into the blogging grove this week!

Update
I haven't blogged in almost a week, as we have just been really busy. I know, I also haven't been commenting that much. When I checked my google reader on Monday, I had close to 100 new blogs! Google reader has been completely frustrating for me recently as well. It keep freezing on me and I have to do a force quit. Ugh! Anyways, I am finally caught up on my reading, but I haven't gotten a chance to leave any comments. So if you haven't heard from me, I'm sorry!
