Christmas Traditions and Favorites

Tomorrow is officially December and I figure it's time to start thinking about Christmas! So here is a little meme that I got from Brandy. 25 questions as there are 25 days left till Christmas!

Here goes:

1. Wrapping paper or gift bags? Paper mostly unless the item is hard to wrap then I just throw it in a bag

2. Real tree or Artificial? real, I love the smell!

3. When do you put up the tree? well last year we put it up the day after Thanksgiving. Within like a week or two it was so dead! So we are waiting a little bit longer this year.

4. When do you take the tree down? after new years.

5. Do you like eggnog? No gross!

6. Favorite gift received as a child? plastic dish set and drying rack when I was 3

7. Hardest person to buy for? My dad

8. Easiest person to buy for? David

9. Do you have a nativity scene? No, I would like one though.

10. Mail or email Christmas cards? haha, neither. I'm lazy

11. Worst Christmas gift you ever received? hmmmm, I don't really know. I can't think of anything off the top of my head.

12. Favorite Christmas Movie? Christmas Vacation

13. When do you start shopping for Christmas? about 2 to 3 weeks prior

14. Have you ever recycled a Christmas present? nope, actually I haven't

15. Favorite thing to eat at Christmas? My mom's shortbread cookies and mashed potatoes

16. Lights on the tree? of course

17. Favorite Christmas song? I can't really pick one, but I do really love Ella Fitzgerald's Christmas album

18. Travel at Christmas or stay home? different every year

19. Can you name all of Santa's reindeer? nope

20. Angel on the treetop, star or…? I like both, we don't have either actually. I looked around for one last year and didn't find any that I liked

21. Open presents on Christmas Eve or morning? Christmas morning

22. Most annoying thing about this time of the year? traffic and parking

23. Favorite ornament theme or color? No real theme or color. I do like Hallmark ornaments

24. What do you want for Christmas this year? curtains for my bedroom

25. Most favorite Christmas Tradition? growing up we always went to the midnight Christmas Eve service. I loved it because they always sang Silent Night and they would turn off the lights and we would have candles. Then at the end of the service every year they played, Go tell it on the Mountain.

Too Early In The Morning

I had to do some errands early this morning, so I woke up at 7. That is an ungodly hour, when you're not getting up for work or it's the weekend. And especially when it's the weekend of a holiday!

Since, I was off on Thanksgiving and yesterday when the alarm went off, I felt like I was getting up to go to work. The cats thought I was going to work as well and did their normal routine of sitting in the bathroom with me while I get ready.

Once I was up and around, it was nice to be out in the crisp morning weather. The sun was further up than when I go to work, which was also nice. The downfall was that I have been so tired all day. I kept yawning like crazy and I am getting to bed late again.

Yes getting up early has it benefits, but not enough for me. I would still rather be in my nice comfy bed, with my kitty laying on me and my hubby next to me. Early rising on a holiday weekend should be banned!

Not Enough Hours In A Day

Were did today go? I feel like the flew by. I was busy all day in the kitchen. I was either cooking or cleaning. Everything went well though. All of the food and company were good. We gave away a lot of leftovers, since we will gone for a couple of days.

Everyone has left and now it's time to pack for our trip. It's going to be a long night! Anyways, it was all worth it!

Happy Thanksgiving!

I want to wish everyone a Happy Thanksgiving! I hope everyone that is traveling to celebrate with their families has safe trips and doesn't hit too much traffic. David is currently playing football and I am about start getting the brine ready for tomorrow's turkey. There is so much to be thankful for, so here are couple of those things.


David: I am thankful to be going through this journey called life with him by my side.

Family: We both have great families. Neither cause drama and are always there for us.

Friends: We have such great friends who we are able to spend time with in fellowship.

Health: We currently are healthy and living each day.

Our Church: We are very lucky to be part of such a wonderful caring and welcoming church. One where the Word is not watered down but is food for the soul.

Work: For the moment we both currently have jobs especially during these hard economic time. This may be changing for David soon. But I know that whatever happens, that the Lord will provide for us.

Finally, the most important one of all, I thankful for salvation in Christ. With out that none of this world matters.

Rain, Oh How I love You

Right now I love the rain! That's because we haven't had a good rain since last spring. Oh, the joys of living in an area that is practically a desert.

I was lucky enough to get off work at 1:00 today, because of tomorrow being Thanksgiving. We spent the afternoon just relaxing and watching TV. It started pouring out, so I sat in front of the window and just watched it come down for the longest time. Eventually, I ended up falling asleep and had a much needed nap. I love the feeling of not having to worry about going to work tomorrow or feeling rushed. What a great afternoon!

So, I am currently enjoying the weather that we have been having. It definitely feels like fall. Perfect for Thanksgiving!

Here is is my list for the letter H:

1. Husband: I love David of course. I am married to him aren't I. I could write out a ton of things I love about him, but I will keep it short. I love his sense of humor, how he is great with kids. He makes me smile.

2. Hotdogs: especially Chicago Style. Yummm! One of several things I miss about home.

3. Hawaii: We went there on our honeymoon and loved it. Kauai was so beautiful and relaxing. We would love to go back one of these days. Hopefully soon!

4. House MD: This is currently one of our favorite shows. Since, we started watching midway through the show, we decided to catch up by getting it on netflix.

5. Hiking: I love to get away from the hustle and bustle by enjoying nature and getting some exercise at the same time.

6. Hugs: these are great when you have had a bad day.

7. Holidays: all the amazing food and Christmas music is my favorite part of the holidays.

8. Hotels: There is something fun about staying in a hotel. Probably because you always associate them with trips.

9. Hashbrown Casserole from Cracker Barrel: While David was in Arizona this last weekend, he kept sending me picture messages of his food. This included pictures of hashbrown casserole. I was very jealous!

10. Hydrangeas: I love how they come in so many different colors like white, blue and purple. They are so pretty!

Tentative Plans

This is going to be a short post as I am super tired and it is way past my bedtime. Anyways, the tentative plans so far are as follows: it looks like the burial will probably be either Monday or Tuesday of next week in Sacramento. We will probably drive up on Saturday sometime.

We will still be going to Mimi's on Thanksgiving and it looks like we will still be doing dinner on Friday here. That means I will need to go grocery shopping tomorrow night along with cleaning the house somewhere in between spending time with family and working.

So there you go. It looks like the next week will be very busy. Off to bed now!

Sad Yet Rejoicing

I woke up this morning to receive a call from David, letting me know that his grandpa had passed away early this morning. We knew he wasn't doing very well health wise, but it was still a little all of a sudden. He was doing so so and all of a sudden yesterday, he really wasn't doing well. We figured he didn't have long, but I don't think anyone expected it to be so soon.

David has been in Arizona all weekend filming and from the couple of real quick conversations that I was able to have with him, he is understandably upset. I think the part that is the worst for him, is that he is currently so far away from his family and he wasn't able to say goodbye to his grandpa before he passed away. If he hadn't have been working, he would have been able too.

When my grandma passed away two years ago, we knew she was heading downhill very quickly. The doctors told us she only had a few more days. I immediately hopped on a plane and flew back to Indiana. She was unconscious when I got there, but I was still able to talk to her, pray for her and say goodbye. I really do feel that it helped in the grieving process.

I spent all day with the family. While over there, I learned that David's grandpa is to be buried up in Sacramento. Once all the arrangements have been made, we will be heading on up there. Thanksgiving might be put on hold or if we are still here in town, I am sure it really won't feel like a holiday.

Regardless of how our Thanksgiving is spent this year, I know all of us will be thankful. Thankful that Jesus died for our sins, so that we may spend the rest of eternity with the Lord. Even though we are all sad that David's grandpa passed away, we are rejoicing that he is with the Lord.

On my way home tonight, the song "I Can Only Imagine" by Mercy Me came on. It was the perfect moment for that song to play, as it expressed exactly what I was thinking.

Please pray for David and his family during this time of grieving.

Kitties and Wiggley Lizard Tails

The other day I came across a interesting situation. I can't remember what I was doing, but I may have been watching TV or on the Internet in the living room. When all of sudden, I heard a weird sound coming from the back room. I wasn't going to go look into it, as I figured it was nothing, but I changed my mind for some reason.

I walked into the bedroom and called out to the cats. Neither of them came running though. I heard clacking of the long blinds from the back door. I walked around the bed to take a look and the cats were indeed playing in the blinds. They were enthralled with something. I pushed the blinds away and there on the ground is something wiggling.

I look closely and realize it is a lizard tail flapping around on the carpet! I immediately threw it out the back door. The cats were quite sad at me for throwing away what they considered a toy.

My first thought was, how in the world did it get inside? Did the cats bring it in the house? No, that doesn't sound right, as they hadn't been outside in hours. The tail wouldn't be still wiggling, if it had been that long. The only thing that I can think of, is that some how the lizard got into the house and the cats pulled off it's tail while playing with it.

The big question is, where is the lizard now?

Chilly Mornings

Even though the weather during the day has still been very warm here, the last couple of days were actually in the 80's, the mornings on the other hand have become quite chilly. Recently in the mornings, I have been walking briskly to the car and have already started turning on the heat, while I drive to work because I have been cold.

I am starting to think that it is possibly time to pull my pea coat out of the closet and get it dry cleaned. Now, I am sure all of you locals, probably think I am nuts and it's still pretty early to be pulling out the winter wear. Well, I am sure a lot of you, probably don't even wear coats during the winter here in So Cal.

I, on the other hand am always cold, just ask David. I am sure he will whole heartily agree with me. You would think that from growing up in the Midwest, I would be able to handle the cold since it snows and is freezing compared to here. Nope, I was freezing there and I am freezing here. It's actually amazing how quickly you climatize anyways.

Anyways, I think I will drop my pea coat off at the cleaners tomorrow. I am looking forward to when it eventually gets cold enough to pull out the scarf and gloves. See, I told you I am always cold. I even wear a scarf and gloves in the winter here!

Turkey Dreams

The other day, I had a dream that wasn't a nightmare, but it did leave me feeling nervous. My dream was about Thanksgiving and how I forgot to buy the turkey! Who dreams about that! Well, I guess I do!

I woke up on Thanksgiving day and went to prepare everything, only to find out I hadn't gone to the grocery store! From what I remember, I was in a frenzy trying to find a grocery store that was open. I kept thinking to myself, even if I found a grocery store that open, there wouldn't be enough time to brine it since it takes at least 24 hours. Oh the horror, that I couldn't brine the turkey. Really, I was that upset that I couldn't brine it? It's not like you have to brine it or the meal would be ruined.

Anyways, I don't really remember much after the brine part. I do remember in the morning, being a little worried that I didn't have time in real life to pick up everything. I had to remind myself that Thanksgiving was over a week away! I laugh now just thinking about it.

This is kinda of a random post, but here goes. I have been really bad about posting pictures of us and different things we have done the last several months. I recently came across a bunch of pictures on the hubby's computer and also on mine. So, I thought I would share.

We were so far up this game and the Angels were killed!


The next day though a friend gave us tickets for the second row along the 3rd baseline. They were the most amazing seats!


Unfortunately they lost again.

I had also wanted to post some pictures of a wedding we went to this summer, along with some other photos and I can not remember for the life of me where they are saved. I have spent awhile now looking for them and I can't find them. I guess that will have to be it for today. It's way past my bedtime.

Thanksgiving Table

I am really looking forward to Thanksgiving this year, because I am cooking the day after Thanksgiving again. Since our place is so small, we won't be eating at the actual table though, so I hadn't really looked into table setting because of this. I was thinking the other day, that even though we won't be sitting there I could still I have some sort of centerpiece with the food around it.

The Getty Villa

So, yesterday we went to the Getty Villa in Malibu, with the hubby's family. I think we all really enjoyed ourselves. Even though I enjoyed myself, I was a little surprised, because I was expecting it to be J. Paul Getty's home and not a museum. Kinda like the Hearst Castle or the Vizcaya Museum Gardens in Miami. I got over that quickly and focused on the gardens and artwork. My favorite part of the museum was the gardens. I really recommend as well, getting the head phones. It was really worth the extra $5.00.

It was also nice to get away and head down to the ocean. After leaving the museum, we headed over to Dukes restaurant for a late lunch. David and I have officially now, been to all 4 Dukes restaurant, Kauai, Honolulu, Huntington Beach and now Malibu. My favorite is the Kauai one. Not surprising, because your talking about Kauai. We got the Hula Pie for desert and it was amazing like always. It is macadamia nut ice cream, with chocolate fudge and whipped cream. Yummm!

On the way home, we saw the most amazing sunset I have ever seen. No pictures unfortunately. The sunset was so beautiful, from all the smoke in the air, from the fires. It was this gorgeous red color. Also because of the fires and freeway closures, it took us forever to get home. As we got close to home, we could see the bright red glow in the distance, from the Orange county fire. It was very eerie.

Anyways, we had a good time. Here are the pictures we took of the museum.

Nothing Interesting

I have decided to redeem my free post card tonight. It's like a get out of jail card or a coupon. It's been a really long day today and I am really tired. I don't have the energy to write a long post. We went to the Getty Villa and it was great. I came home and did a cardio workout which kicked my butt. I had wanted to post pictures of our trip to the Getty Villa, but I guess I will do that tomorrow. I keep yawning, so that means I need to go to bed.

That being said, we are half way through Nablopomo! Woohoo!

Disgusting

We recently started watching the show, Kitchen Nightmares and we both really enjoy it. If you haven't seen the show, the short version of what happenes is that Chef Gordon Ramsey, goes into a failing restaurant and tries to turn it around. He makes changes to the decor and menu, along with other areas, in efforts to keep the restaurant going.

Last nights episode though, made me sick to my stomach. Chef Ramsey visited a Mexican restaurant and basically shut down the restaurant, because it was so dirty. He came out of the kitchen and told all the customers that they needed to go home immediately. They were serving food that was cooked the previous week. In the fridge they had chicken and fish that was slimy and they also had cockroaches running around everywhere on the floor and dishes. Yuck!

Even though, he completely turned the restaurant around and it is still open, I wonder if since he left, they slipped back into old habits. The episode makes me wonder what we really are eating when we go out to eat. I almost don't want to eat out anymore!

Fresh & Easy's Focaccia Bread

Recently, I made Fresh & Easy's, rosemary focaccia bread for girls night, the last time it was my turn to cook. I couldn't believe how good it was. It is super easy, as it is premade. All you have to do is open it up and add some olive oil and kosher salt. I added some red onion slices on top as well. When it comes out of the oven, it smells amazing because of the fresh rosemary. Fresh bread is such a great addition to to your meal.

The Cure To All Your Problems

So I just got home from girl's night and sat my butt down on the couch to veg out before going to bed. As I am sitting here, I am feeling tired and stressed for some unknown reason. I am also mad at Direct TV, because I am missing America's Next Top Model right now. It is my one guilty pleasure when it comes to TV and it the 2nd to last episode of the season. The box hasn't worked since Sunday and the new one was supposed to arrive today, but of course it didn't. I will now have to watch it on my little itty bitty screen on my laptop. Thank you Direct TV, insert sarcasm.

On top of this, I knew I had to blog before going to bed, but I had no clue what to write until right now. This cute little kitty just climbed onto my lap and started purring away. Boy, does she know how to make me feel all better. I am currently typing with one hand, so she won't move. I am happy now! It is amazing how such a small animal, can make you instantly feel better about everything.

Blog Changes

For a couple of weeks now, I have been working on a new layout for my blog. Hopefully, it will be done soon, so I can be an AW and show off what I have accomplished. I started out knowing nothing about html and thanks to Amy, she directed me to a couple of how to blogs for changing your layout.

Several weeks later, I still know nothing, hehe. Most of what I have changed has been through a lot of trial and error. Making slight changes with the code and messing up and having to start over. I have a new appreciation for anyone that designs websites!

The overall look will be similar, but little changes will be in place to make it more unique. Almost everything is done, except the font colors, which I need to tweak and a couple of small items that need changing. I am getting to the point though, where I just want to it to be done. Because of this, I have become very unmotivated to finish it. The thought of sitting down and working on it is very unappealing right now.

I think that maybe by setting a goal of when I want it to be done, might help motivate myself to get it finished. So, I have decided that my goal is to have it all done by the end of the week. Let's see if I can accomplish this.

No Words

I am completely at a loss of words right now. It's been a little over a week of Nablopomo and I don't feel like blogging at all. This is when I would normally take a break and not worry about it for a couple of days. So since, I need to still blog even though I don't feel like it, here are some random thoughts.

~ The weather has been so nice the last couple of days. I am sad that it is supposed to warm up again towards the end of the week.

~ In the morning, the apartment has been cold. So cold, that if I had my way I would turn on the heat. I don't though, because David would then be hot. He is always hot and I am always cold.

~ I think I have been lazy in all aspects of my life right now. I desperately need to go to the grocery store, as we are quickly running out of food. Maybe I will go tomorrow. But you know what, that's what I said yesterday and the day before that.

~ I took a bunch of Halloween candy to work today and by noon all of it was gone! I couldn't believe it.

~ Work is full of drama. Please leave me out of it.

~ I keep thinking that it is Tuesday and then I get all bummed when I realize that it is really Monday.

~ We are going to the Getty Villa this weekend. I am really looking forward to it. I have been wanting to go since early summer and we finally have a chance to go. Either David or I will take lots of pictures.


Well, it's time for bed. Even though tomorrow is Veterans Day and I have the day off, I am still tired. So that's it for today. Hopefully, tomorrow I will feel more motivation to blog.

Joshua Tree National Park

So it's been two weeks since our Joshua Tree trip and I have been putting off blogging about it. I don't know why, but I just haven't felt the creative juices on this one and we didn't take too many photos.

Like I said in my post that we were back from the trip, things didn't go as planned. It seemed as if everyone had some issues of some sort. It was extremely cold in the evening. The hubby woke up early the first morning out there and the car said 39 degrees. That is much colder than the weather forecast predicted. During the day, it got to probably the high 80's. The sun is very intense out there as the elevation is around 4,000 feet. We spent most of the day while the sun was out under the easy ups.

David has decided that he does not want to return to Joshua Tree in the fall, as he thought the temperatures were too extreme. He wants to stick to the annual spring trip in April. Me on the other hand was fine with. Oh, well.

Food wise, the couscous salad was great. I loved white kidney beans in it and the basil. I would definitely make it again! The Firehouse Chicken was also very good. David really loved this one.

The campfire cakes were a little bit of a let down though. They were a lot of work to prepare. The cake part on the inside was really good, but as you got to the bottom they had a orange rind flavor, which I am not a big fan off. I wonder if I had watched them more carefully, while cooking on the fire or the coals were not as hot, that maybe they would not have tasted like orange rind as much.

Here are the recipes for the couscous salad and the chicken.

Tuscan-Style Couscous Salad
Source:(adapted from Vegetarian Classics, by Jeanne Lemlin) via The Way The Cookie Crumbles
Serves 4 as a main course

Ingredients:
1½ cups couscous
½ teaspoon turmeric
2 cups boiling water
½ cup pine nuts
1 (15-ounce) can small white beans such as navy or Great Northern, rinsed well and
drained
1 pint cherry tomatoes, halved
¾ cup shredded fresh basil
1 small red onion, slivered

The dressing:
3 garlic cloves, unpeeled
⅓ cup lemon juice
½ teaspoon salt
Generous seasoning freshly ground pepper
3 tablespoon extra virgin olive oil

Directions:

Place the couscous and turmeric in a large bowl and mix. Pour on the boiling water, stir, and immediately cover the bowl with a large plate. Let sit for 10 minutes. Remove the cover and fluff the couscous with a fork. Let cool.

Place the pine nuts and unpeeled garlic cloves in a small skillet and toast over medium heat, tossing often, until golden, about 5 minutes. Watch them carefully because they can easily burn. Let the pine nuts cool, then mix them into the couscous along with the beans, tomatoes, basil, and red onion.

Mince the garlic. Place the dressing ingredients in a jar with a tight-fitting lid and shake vigorously. Pour over the couscous mixture and toss well. Let marinate at least 30 minutes before serving. Cover and chill if longer than 30 minutes. Serve at room temperature.



Firehouse BBQ Grilled Chicken

Source: Picky Palate

Ingredients:
6 thawed boneless skinless chicken breasts
½ Cup Frank’s Red Hot Sauce
¾ Cup of your favorite BBQ sauce
4 Tablespoons melted butter
2 Tablespoons Worcestershire sauce

Directions:

Place all ingredients in a large Ziploc bag and marinate for at least an hour. Preheat stovetop grill pan (this is what I used) or outdoor grill over medium heat. Grill chicken for 5-6 minutes each side or until chicken is cooked through.

Too Many Choices

Why is it so hard to choose a menu for holidays? And why does food have to taste so good? I got my Cooking Light magazine a couple weeks ago, but only recently had a chance to sit down and look through it. Since, I did this I seriously don't know what I want to make! The November issue is packed with so many recipes that look amazing. I can't imagine what the December issue is going to be like!

Anyways, I have tabbed too many recipes to make. I figure I can share them with you, since I can't make them all. Here are the ones that caught my eye:

White & Green Christmas Decor

I was looking for ideas for Christmas decor the other day. I know, I know, I am a little early on this one, but it's dang Walmarts fault for playing Christmas music the day after Halloween!

I did come across this picture on Country Living, which I love. The white and green theme is very nontraditional and the white reminds me of crisp white snow. Now, we can't do this in our place. We are missing a couple of key essential items, such as mantle and white furniture. Oh, the joys of apartment living! Anyways, I really do like this living room.

I finally tried Starbucks, Pumpkin Spiced Latte and it is sooo good! I know I am late jumping on board with this one, but I never drink coffee. Now, I don't dislike coffee at all. In fact, I can't drink coffee because of the caffeine in it. Unfortunately, I am prone to kidney stones, so no coffee or no dark sodas.

Since, I have been on a pumpkin kick this fall, I decided to give it a try. Wow, is all I can say! I have been missing out!

Prayer For Our Leaders

Our household is sad this morning, of the outcome of yesterdays presidential election. We are happy though, to see that our country has been able to put behind us, the racial issues that plagued us for so many years. We have come so far in such a short period of time!

Even though the election is over, we must continue to pray for our county, President Obama and all of our new leaders. There are going to be a lot of changes in the coming months and years to come. We need to pray that the Lord's will will be done, even though we may not agree/understand his plan.

His Will Will Be Done

Are you voting today? I sure am! I will be heading to the polls today after work with the hubby. I won't get all political on you all, but I feel so greatful to live in a country, in which I have the right to vote. In so many others, women do not get the chance to. Everyone has the chance. Because of this, I don't feel bad for people when they complain about how the country is being run, when in fact they didn't even vote and voice their opinion.

I will be so very glad when the election is over though. I am getting very tired of hearing all the commercials from both sides and reading blogs about it. I am tired of hearing about how low people stoop to bash both sides. Like tearing down people's banners for yes and no on Prop 8 or tearing off people's bumper stickers. This last one happened to us today.

That being said, I don't plan on watching the election coverage tonight. I spoke with my dad last night and this is his plan as well. I get nervous just thinking about the outcome. When this happens, I have to remind myself regardless of the outcome, that the Lord is the ultimate ruler and not who gets elected. His will will be done today. Even though I may not have a clue as to why things happen, there is an ultimate purpose in everything.

This is a very comforting thought, during a very uncertain time!

Did I Sleep Through Thanksgiving?

The hubby and I were at Walmart the other day picking up a couple of items. We had been there a little while, when I noticed that the store was playing Christmas music. At first I though I was hearing things, but I listened again and it was true. I couldn't believe it! 2 days after Halloween and the store was already playing Christmas music.

I know that several stores like CVS and Target already brought in some Christmas merchandise awhile ago. But there is a huge difference between some wrapping paper tucked away in the back aisle and playing Christmas music for everyone to hear. I took a look around Walmart and they have already put up their Christmas signage, as well.

The Consumerist reported the other day that due to the economy, retail stores are fearing a poor Christmas season. Thus, they are planning on offering large discounts now, compared to previous years of slashing prices the day after Thanksgiving. Too bad we are saving for house and will not be able to take advantage of some of the good deals!

Overall, I am really looking forward to the holiday season. The holidays always mean lots of really good food and socializing. I do wish though the stores would wait a little while, to bring in all of the Christmas items. I feel like it is only now starting to feel like fall and Thanksgiving. I don't want to skip those and go straight to Christmas!

Pumpkin Cheesecake with Caramel Sauce

I made this recipe last year without the caramel sauce and it was soo good! We ate it all, before I even got a chance to blog about it and take pictures. Well this year, I decided to take the time and actually make the caramel sauce and boy is it worth it! It is amazing and everyone has loved it. This is definitely my all time favorite pumpkin recipe. I plan on making it again for Thanksgiving. I can't wait!

Pumpkin Cheesecake from the Cheesecake Factory

Ingredients:
1-1/2 cups of graham cracker crumbs
5 tbsp. of butter, melted
1 cup of sugar, plus 1 tablespoon sugar
3 (8 ounce) packages cream cheese, softened
1 tsp of vanilla
1 cup of canned pumpkin
3 eggs
1/2 tsp of cinnamon
1/4 tsp of nutmeg
1/4 tsp of allspice (I used pumpkin pie spice)
caramel sauce

Directions:

Preheat oven to 350 degrees F.

Crust: Combine graham cracker crumbs with the melted butter and 1 tbsp of sugar in a medium bowl. Stir well enough to coat all of the crumbs with the butter until crumbly. Put foil partway up the outside part of an 8-inch springform pan. Press the crumbs into the bottom and about two-thirds of the way up the sides of the springform pan. You don't want the crust to form all of the way up the back of each slice of cheesecake. Bake the crust for 5 minutes, then set aside until you are ready to fill it.

Cheesecake: In a large mixing bowl combine cream cheese, 1 cup of sugar, and vanilla. Mix with an electric mixer until smooth. Add the pumpkin, eggs, cinnamon, nutmeg and allspice and continue beating until smooth and creamy. Pour the filling into the pan. Bake for 60-70 minutes. The top will turn a bit darker at this point. Remove from the oven and allow the cheesecake to cool. When the cheesecake has reached room temperature, place in the refrigerator. Once the cheesecake has chilled completly, remove the pan sides and cut the cake into 12 equal slices. Drizzle each slice with caramel sauce.



Caramel Sauce:

Ingredients:

2 cups sugar
1/2 cup water
1-1/2 tbsp light corn syrup
2/3 cup heavy cream
2 tbsp unsalted butter, at room temperature

Directions:

Put the sugar, water and corn syrup in a medium heavy bottomed saucepan. Stir to just combine the ingredients and then put the pan over medium-high heat. Heat, without stirring, until the caramel turns deep amber, about 5-10 minutes. Lower the heat a bit and, standing back from the saucepan add the cream and butter. Stir mixture to calm down the caramel and dissolve any lumps.

November 1st

Ok, so this is my first NaBloPoMo post! I took the advice of the website and am blogging early, so I don't forget about it.

The weather looks lovely today from my window and I am really hoping that it won't be super hot today. The hubby just left for a day of filming auto races. He will be gone all day and probably won't get back till late this evening. Since, he will be gone, I will be having lunch with gal pal Kristy. We getting sushi. Yummm!

Probably after lunch, we will do a little shopping. I am not looking for anything in particular to buy but more or less looking for ideas. Christmas/ Entertaining ideas to be specific. I want to do a nice sit down meal with some friends, right before Christmas and I am looking for table setting ideas.

This evening, I will probably do some cleaning and laundry. The clothes pile is starting to look monsterishly huge. Laundry is my least favorite choir to do if didn't you already know.

Yep, that's about it. I have to go now and get ready for the day! Yay for it being November!
